Dry Amber Wine produced from a blend of old Greek grape varieties from 50-year old unirrigated vines. Hand-picked, wild fermented on skins and stems for the full duration of fermentation, unfined and unfiltered. Without added sulphites or oenological additives.
Inherently volatile and alive, each vintage and even each bottle expresses its own singular identity. Within the bottle it continues to evolve, revealing different facets day to day, even glass to glass. Once tasted, it can never be tasted again. Suitable for long term cellaring under proper conditions.
A maximum of 2000 bottles are produced annually, each hand numbered and signed.
