Olive Oil (2025)

Unfiltered Extra Virgin Olive Oil, from a blend of old Greek olive varieties and individually hand picked from our unirrigated olive groves. Extracted on site within hours in our own mill.

Left deliberately unfiltered and accepting natural instability and a shorter shelf life, the oil retains microscopic remnants of olive skin, pulp, pit, and flesh, along with microdroplets of natural olive water. These droplets contain trace amounts of phenolic compounds, sugars, organic acids, yeasts, proteins, enzymes, pectins, and other naturally occurring constituents present at the time of pressing.

A maximum of 1500 bottles are produced annually, each hand numbered and signed.
